Omelette Recipe Ingredients:
• 2 tsp olive oil
• 1 large egg
• 2 egg whites
• 1 tbs milk
• ¼ cup chopped tomatoes
• ½ cup baby spinach
• 2 slices shaved ham, torn roughly
• 1/3 cup (65g) cottage cheese
• 2 teaspoons chopped fresh chives
• Salt and pepper to taste
Omelette Recipe Directions:
Omelette Recipe Step 1: Beat eggs and milk in a bowl until combined. Season with salt and pepper. Set aside.
Omelette Recipe Step 2: Place olive oil in a non-stick frying pan over medium heat. Add ham and cook for 1min, add tomatoes and baby spinach and cook for a further 1-2 minutes or until baby spinach is wilted. Remove from pan and wipe clean. Add another 1tsp of olive oil to the pan and return to heat.
Omelette Recipe Step 3: Pour in the egg mixture and cook for 2-3 minutes or until surface is nearly firm. Place the ham, spinach and cottage cheese over half the omelette, then using a fork, carefully fold over the other side to enclose the filling. Cook for 2 minutes, or until cooked through. Sprinkle with chives.
