Make your Christmas leftovers work for you and build muscle mass from Boxing Day and beyond.
Here are 3 tasty ways to use up your leftover ham, turkey, roast beef and whatever else is cluttering up your fridge for muscle gain.
Ham and Eggs
Ingredients:
- 2 slices ham off the bone, chopped
- 3 whole eggs
- 3 egg whites
- 2 slices fresh bread, toasted
- 2 tbs low fat milk
- ¼ cup low fat grated cheese
- Salt and pepper
- 1 tbsp olive oil
Directions:
- Heat pan with olive oil.
- Whisk together eggs, milk, salt and pepper.
- Pour egg mixture into pan. Drag set egg towards centre of pan, tilting pan so uncooked egg comes in contact with base. Cook for 1 minute then add ham and cheese and cook until creamy.
- Remove pan from heat and serve.
Roast Beef Wrap
Ingredients:
- 2 wholemeal wraps
- 4 slices roast beef
- Leftover salad and roast vegies (sliced)
- 1 tbsp fruit chutney
Directions:
- Spread mayo on wrap.
- Layer ingredients.
- Fold in ends and roll up to enclose the filling.
- Lightly toast in toastie machine.
Turkey and Ham Carbonara
Serves 4
Ingredients:
- 500g whole grain spaghetti or fettuccine
- 2 cups shredded roast turkey
- 2 slices ham of the bone, chopped
- olive oil cooking spray
- 3 eggs
- 50g parmesan cheese, finely grated
- 2 tablespoons flat-leaf parsley, chopped
- 3 garlic cloves, crushed
- Salt and pepper
Directions:
- Lightly spray a frying pan with oil and bring to med heat. Add ham and onion and cook until browned.
- In a large bowl whisk together the eggs, garlic and parmesan. Add ham and onion, salt and pepper.
- Cook the pasta according to packet instructions and drain well. Add the hot pasta to the egg mixture and stir through for 1 minute so that the hot pasta cooks the egg mixture.
- Stir through the turkey and parsley.
- Serve.
